Texas Citrus Salsa

Last weekend we went to Houston to visit my in-laws.  Stereotypically, I know that a visit to the in-laws is a dreaded event, but not with mine.  I love to visit them and my mother-in-law is a great cook.  She shared a couple of recipes with me that I want to pass along because they were soooo good.    (See the most recent post for her Citrus Rice Salad.) 

Trying to be local, we used Texas citrus for this salsa.  It is very refreshing and would be good with fish or poultry.  We, however, ate it right of the bowl with tortilla chips.

 
Citrus salsa
1 red grapefruit
1 orange
1 medium tomato
1 bell pepper
1 jalapeno
3 T. red onion, minced
1 T. cilantro, chopped
1 1/2 t. sugar
1/4 t. salt
1/4 t. cayenne pepper
Supreme grapefruit and orange and place in small mixing bowl.  Chop tomato and peppers (remove seeds from jalapeno.)  Add remaining ingredients and toss to mix.  This is better if you let it set for 1 hour before serving.
