Final prep before Christmas Eve

This is my brother-in-law’s all time favorite cheese ball.  I started making it for the Christmas Buffet after my husband and I started dating and since then, my brother-in-law requests it for most family get-togethers.  (I have even been known to send him a cheese ball kit when we all can’t be together for the holidays.)

Don’t tell your guests and they will never guess this has pineapple in it.

Cheese Ball

 2 pkgs. Cream cheese (I usually use Neufchâtel Cheese because it has less fat.)
6 oz. crushed pineapple, drained (about 1/3 cup)
1 T. season salt
1 t. dried onion flakes
¼ c. dried bell pepper flakes
1 c. pecans, chopped (divided)

Mix first 5 ingredients with ½ c. chopped pecans.  Form into ball and roll in remaining pecans.   Refrigerate for at least one hour.
