Whole Grain “Peanut Butter and Jelly” Waffles

My dinners this past week during the tournament consisted of Sloppy Joe’s, liquid cheese, chips n’ dip, pizza rolls, and desserts.   There were homemade foods in our hospitality room—homemade soups, homemade chili, and someone even brought homemade chicken and noodles (with homemade noodles!!), but I have a problem with conviction so I migrated toward the fried premade foods from Sam’s and the plethora of cookies, pies, cinnamon rolls, and candy that was on hand.  (I may have eaten one carrot stick.)

Time to detox.   Since January 1, I have read many of your posts about cleanses and re-dedications to eating healthier in 2012.   I was right there with you—until the hospitality room.

So this morning, I got up, dusted off the waffle iron and decided to revamp our stand-by waffle recipe into a little healthier fare.   (I do not want to insult any of you struggling through a cleanse, but this is as close as we are going to get to renewing our purpose to eat healthy.)

Whole Grain “Peanut Butter and Jelly” Waffles

1/4 c. butter, melted and cooled
1 T. honey
1/4 c. olive oil
2 large farm fresh eggs, whipped to a frenzy
1 3/4 c. 2% milk
1/4 c. milled flaxseed
2 1/4  c. whole wheat pastry flour
4 t. baking powder
1/2 t. fine sea salt
1 c. walnut pieces

Melt butter, mix in honey and oil, let cool and set aside.

In a large mixing bowl, whip eggs with a whisk until “frenzied.”   (Seriously, they need to be frothy.)   Add milk and whisk some more.

In a smaller mixing bowl, mix together dry ingredients with a whisk.

Add all ingredients (both butter mixture and dry ingredients and walnuts) to the eggs and stir until just combined.

Ladle on prepared waffle iron and cook until brown and crispy.

I absolutely LOVE peanut butter on waffles.   I decided these whole-grain beauties needed a perfect topping so I topped each stack with about two tablespoons of creamy peanut butter and then I drizzled them with some Vino Cotto.

I was really surprised.   I had used the Vino Cotto before on pancakes but only with butter, never with my beloved peanut butter.   It tasted like “grown up” peanut butter and jelly.

More true confessions:   The drizzle of syrup was for picture purposes only.   I dumped it on after the photo snap.

Maybe I will eat healthier tomorrow.

  • I have been equally bad this week and need to lighten up, so to speak, next week. The waffles look amazing, and the syrup comment made me laugh.

      I don’t really know if I lightened anything up (lol) but at least it was healthier than what I have been partaking of this week!

    Yeah, this is my kind of cleanse. I’ve actually been eating lentil soup all week b/c the family thought it was awful! I had a totally different opinion…but I sacrificed a wee bit by skipping all the starchy side dishes 🙂 Thanks for your sweet comment and condolences~

    I just made a decision (actually, hubby suggested it), that we do a cleanse of the pantry and freezer. I think you will see some more posts regarding food challenges with only what is on hand. My thoughts are with you and your family, Liz.

    This sounds delish! I’m a HUGE fan of peanut butter. Don’t worry about a bad week – some times it just happens! Lord knows, it’s happened to me often enough!

      Thanks, Ann, but this was really bad. When cleaning up each night, I found myself stuffing a few leftover jalapeno poppers or chex mix in my mouth just so I wouldn’t have to throw it away. Thank gooddness that tournament is over!

  • I wish I had a waffle iron!!! I wish, I wish..nope still didn’t come true. I love that you dumped more on after the picture, as I was looking at the photo I was thinking to myself…man, that wouldn’t be enough for me 😉

  • I love making pancakes/waffles and muffins healthy b/c they can still be so delicious despite the healthification! This passes for healthy in my book, too. Hey, these are whole foods! Bring it.

      Thanks for the healthy seal of approval. I am sure they were healthier before I dumped the syrup and added another layer of PB. 🙂 I am trying my best to remember “all things in moderation”!

  • For Christmas, I received my first waffle iron! My roommate and I make waffles at least once a week for “brinner” lol! We usually use a standard recipe, but now I am hyped to try your recipe out! PB on anything and I am sold!

  • Thank you for confessing publicly. I have been groaning about my lack of willpower this past week with the snacks I have eaten. I gained weight…hate it. But I am trying now and I am actually writing down what I have been eating so, like I did on weight watchers, this is helpful.
    Love your waffles. My husband is a big fan of the waffle. Looks great…and healthy!
