Tropical Waffles

Here’s the scenario.

Sunday morning…waking up late…wanting a leisurely breakfast with coffee, tea and the newspaper.

THERE IS NOTHING IN THE FRIDGE.

But, that is not unusual these last few months.   I have gone to the grocery store only a hand full of times since the Clean Out started.

Here’s the deal.  There was no milk and no butter in the house!    (Luckily I did have a surplus of farm fresh eggs from my little old egg lady!)

I went to the pantry and threw together what we had on hand.

Tropical Waffles on the Fly

2 c. flour
4 t. baking powder
1/2 t. sea salt
2 large farm fresh eggs
1 (14 oz.) can lite coconut milk
1/2 c. coconut oil
1 (11 oz.) can Mandarin orange segments, drained

Preheat waffle maker to high setting.

In a small mixing bowl, whisk together dry ingredients.   Set aside.

In a larger bowl, whisk eggs until fluffy.   Whisk in coconut milk and coconut oil.    Add dry ingredients and stir until just incorporated.    Fold in drained orange sections.

Batter with orange segments.

Cook according to waffle maker’s manufacturers directions.

No butter in the house either (hence the peanut butter) and just barely enough syrup

 

This is not a crisp waffle and it is not a sweet waffle.   My standard waffle recipe (which I adapted from Betty Crocker) has one tablespoon of sugar.   I omitted it for these.  When you consider you are going to dowse them in syrup, you don’t miss the sugar.

(Actually, these turned out quite good.  I wish I had gone to the freezer to look for some flake coconut to add as well.)

So, now the pantry is minus one can of coconut milk and one can of Mandarin oranges and a bit of coconut oil.

We are progressing.
