Happy Holiday Recipe Club—It’s Cinco de Mayo!

Way before it became hip for the masses to celebrate Cinco de Mayo, I have tried to plan a celebratory, festive, private party on May 5.

The Hubs and I  have a “discussion” every year prior to May 5th and my party planning.

“What are we going to do to celebrate our anniversary?”   (That would be me.)

“What are you talking about?”  (That would be The Hubs.)

“Our anniversary—you know—the night we met,” I reply.

“Our anniversary is in December.   You can’t count this as an anniversary,” is his comeback.

“Oh, yes I can!”

I will save you from the rest of the “discussion.”

The truth is that I do count this as an anniversary.   It was fate that we met.   We actually met through mutual friends that accidentally ran into each other that night and introduced us.   Fateful as well was the fact that it was two days before my sister’s wedding.  (OK, I may be reaching on the connection there, but I always felt like her wedding marked the beginning of our relationship.)

Anyhoo, what does this have to do with Cinco de Mayo and Holiday Recipe Club?

Just the fact that one of the “secret ingredients” for this holiday’s post is Dulce de Leche.    My husband’s favorite dessert is apple pie.    I decided to meld the two together for a Cinco de Mayo/faux anniversary celebration and see if I couldn’t bring him over.

The first thing you need to do for this recipe is to  make your Dulce de Leche.

I found a great technique at Natasha’s Kitchen for making Dulce de Leche in a crock pot.   Natasha, who blogs about all foodie things Russian and Ukrainian, says that “We Ukrainians have been making cooked sweetened condensed milk (guschonka) for years, but who knew we were actually making dulce de leche?”  For her great tips and techniques, click here.

 

Apple Pie with Dulce de Leche
Or “By God we are celebrating an anniversary tonight along with Cinco de Mayo” pie.

4-5 Jonagold apples
1 T. fresh lime juice
1/2 t. balsamic vinegar
1/3 c. sugar
3 T. flour
1/2 t. cinnamon
1 dash freshly ground nutmeg
1/4 t. salt
1 recipe of Dulce de Leche (see here)
2 prepared pie crust rounds (I used my favorite whole wheat pie crust recipe from mom.)
1 T. milk (optional)
1 t. cinnamon sugar (optional)

Peel, core and thinly slice apples.  (I use the food processor to get even slices.)   Combine the lemon juice and vinegar.  Pour over apples and toss to combine.   Mix the sugar, flour, cinnamon, and nutmeg.  Add dry ingredients to the apples and toss again to coat apples.

Place bottom pie crust in pie tin.  Place one layer of apples in crust.  Spread this layer with the Dulce de Leche.   

Top with remaining apples and top crust.  Crimp edges and cut vents in top crust.

Brush with milk and sprinkling of cinnamon sugar (optional).

Bake in 375 degree oven for 45 minutes.
