Avocado Fudgesicles

Okay, I have vowed to not use internet recipes and recipes from blogger friends but to use my plethora of cookbooks and numerous magazine subscriptions for inspiration instead.

I am going to say that this post doesn’t count.   I am going to deviate from the plan today.

 

I have made the original recipe, Chocolate Avocado Pudding with Coconut Milk from Inspired Edibles, numerous times and have shared it with many friends.   It is an easy and healthy dessert that (!!!BONUS!!!) is also delicious.

As the summer heat is on us, I wanted icie treats, something cold and decadent tasting that could cool us down on a triple digit day.    I decided to make Avocado Fudgesicles inspired by Kelly at Inspired Edibles.      (And, I wanted to continue to participate in Heather’s Summer of the Popsicle, part deux at Girlichef).

Avocado Fudgesicles
Based on Chocolate Avocado Pudding with Coconut Milk from Inspired Edibles

2 small ripe avocados, peeled and flesh removed from pit
1/3 c. organic cocoa powder
3/4 c. lite coconut milk
1/3 c. agave nectar
2 t. pure vanilla extract

Throw this all in the food processor and puree until smooth.    Pour into popsicle molds and freeze.   Yields:   about 14 oz.

This is such a thick and creamy mixture that you will need to tap the molds on the cabinet many times so you won’t have air bubbles like mine. They were still more than edible!

I swear, you can tell everyone these are banana-chocolate pops and they will NEVER know the difference.   Seriously.    So good.    (I love recipes that trick people!   Especially when you are helping them eat healthier.)   I gave my sister one this past weekend when she was visiting.    “Would you like a homemade fudgesicle?”

“Absolutely,” she replied.  Both The Hubs and I watched her face as she realized this was no ordinary popsicle.     Her brows furrowed.    “I am getting lots of vanilla.”

“There is a bit.”

“Yogurt?”

“Nope.”

“What kind of chocolate?”

“Cocoa powder.

“Reallllyyyyy?”

“Yes-sir-ee!   Give up yet?”

Finally, I had to tell her the main ingredient was avocados.   “Aha, I knew,” she said.    “I knew a saw one tiny green speck.”

“Whatever,” I replied in true sibling rivalry fashion.

She wanted the recipe.   I haven’t decided if I will share it with her or not.  🙂
