Gifting Granola

Mom and one of the nephews made this granola for The Hubs for Christmas.   It was delicious.   It was so tasty that we asked for the recipe.

It was so easy that I quickly mixed up a batch while the family was here for an after-Christmas-healthy breakfast.

Mom added some candied cashews to hers to put it over the top.

I modified mine without the cashews and used coconut oil instead of vegetable oil.

So, in addition to being a quick thrown-together breakfast, this granola would make the perfect gift during the holidays (saving for next year) or any other time.

Easy Gifting Granola
based on Alton Brown’s Granola

3 c. old fashioned oats
2 c. sliced almonds
1 c. coconut (shredded and sweet variety)
1/4 c. plus 2 T. brown sugar
1/4 c. plus 2 T. pure maple syrup
1/4 c. coconut oil, melted
1/2 t. fine sea salt

Preheat oven to 250 degrees F.

In a large mixing bowl, combine the oats, almonds, coconut, and brown sugar.  Toss ingredients to mix and set aside.

In a smaller bowl, whisk together the maple syrup, coconut oil, and salt.  Pour liquid mixture over the oat mixture and stir so that all pieces of granola are coated.

Place on a parchment lined large sheet pan (or divide onto two smaller ones) and bake 1 hour and 15 minutes.   Set a timer to remind you to stir the granola every fifteen minutes for even cooking consistency.

 

 

 

 

 

Unlike some of my other granola recipes, this one doesn’t require any cooking time except for popping it in the oven.   I would compare the finished product as more of a store-bought granola as the oats and nuts don’t clump together but keep to themselves.  (Does that make sense?)

 

Thought for the day:  Why do I only think about gifts of food during the holidays?   I, for one, would love to get homemade food items for my birthday, for Valentine’s Day, for Easter, for the Fourth of July, for Halloween, for Thanksgiving, for Columbus Day…..
