Company’s Coming Granola

I have lots of granola recipes here at Eliot’s Eats.   I love to make homemade and I couldn’t tell you the last time I bought store bought granola.  (Actually, yes I could.  We bought a couple of scoops of bulk granola in Taos for breakfasts in our rented casita.)

As Thanksgiving inches closer and closer, I am still preparing for our wave of guests.  They are well on their way at this point from almost all directional points.   One is coming from northern Iowa, three are coming from Denver, and two are driving up from Houston.

Besides the Maple-Chai Pumpkin Muffins, I wanted a few other easy breakfast offerings; hence, the Company’s Coming Granola.

Company’s Coming Granola
Based on EE’s Gift Giving Granola

3 c. old fashioned oats
12 oz. roasted, no-salt whole cashews
1 c. shredded-unsweetened coconut
1/3 c. milled flax seed
1/3 c. brown sugar
1/3 c. pure maple syrup
1/3 c. coconut oil, melted
1/2 t. fine sea salt
1/2 t. cinnamon

Preheat oven to 250 degrees F.

In a large mixing bowl, combine the oats, cashews, coconut, and flax seeds.  Toss ingredients to mix and set aside.

In a small sauce pan, combine brown sugar, maple syrup, coconut oil, salt and cinnamon.   Heat to a simmer and whisk to mix.   Simmer for 2-3 minutes until ingredients are smooth.  Pour liquid mixture over the oat mixture and stir so that all pieces are coated.

Place on a parchment lined large sheet pan (or divide onto two smaller ones) and bake 1 hour and 15 minutes.   Set a timer to remind you to stir the granola every fifteen minutes for even cooking consistency.

This may be our favorite granola to date.  (But, I always say that.)

My mom, my in-laws, the BiL, two adorable nieces, and a BIG dog are coming our way.  I am okay with the dog that will be visiting.  He is an English lab and is the most well-behaved dog I have ever been around (although he sheds like crazy).  We are worried about Eliot, but she will probably end up ignoring him.

We did talk the BiL out of bringing the guinea pig and the hamster.  At least twice a week, Eliot will trot back from the garden with some sort of rodent in her mouth.   She is so proud.  

I had visions of carnage, chaos and catastrophe in my head.
