Banana-Pineapple Pop-o-ladas

During the last week of July, we traveled to Colorado to hang out with the nieces for a while.   We had a great time and established the following daily routine.

  1. Breakfast on the deck.   If we were lucky (and up early enough), we were treated to fly-overs by hot air balloons along with their million dollar view of the mountains.53ccc9c9819d587
  2. Computer time while The Hubs and I worked remotely and they continued their obsession with Animal Jam. (Really, I didn’t get it.)
  3. Our mid-morning walk to see how many prairie dogs we could count.
  4. Lunch (which consisted of anything from Unc’s famous peanut butter and banana sandwiches to the last night’s leftovers)
  5. Our mid-afternoon walk to the mailbox (1.25 miles round trip).
  6. In between we threw in some “fun” math and some reading.

It was on these afternoon walks that a tradition was established.  We had to have homemade popsicles to slurp on as we walked.   We made fudgesicles, rainbow pops, and a new creation: Banana-Pinapple Pop-o-ladas.

A while back, I was reading my favorite blogs and found a recipe for Frozen Banana Coladas.   (If you have not been exposed to the culinary humor of Adam at the Unorthodox Epicure, you must go there as soon as you are able.)  I certainly made one of these drinks as soon as I was able and as I sipped one down, I thought, “This mixture would make a great popsicle!”

So here you go—two popsicles recipes to make and enjoy.  One is for the little ones and one is for more adult-type people.

 

Banana-Pineapple Pop-o-ladas
The kid friendly version

⅓ c. lite coconut milk
2  bananas, chopped
1 c. fresh pineapple, chunked
Juice from ½ lime
1 t. cinnamon
1 T. honey

Place all ingredients in a blender and puree until smooth.  Pour into popsicle molds and freeze.  (Makes 6-8  popsicles depending on the size of your molds.)

Banana-Pineapple Boozie Colada Pops
Based on Frozen Banana Colada by the Unorthodox Epicure

The adult friendly version.

⅓ c. lite coconut milk
2  bananas, chopped
1 c. fresh pineapple, chunked
Juice from ½ lime
1 t. cinnamon
1 oz. Jamaican Rum
1 oz. Strawberry Pucker

Place all ingredients in a blender and puree until smooth.  Pour into popsicle molds and freeze.  (Makes 6-8  popsicles depending on the size of your molds.)   Or, add ice and serve up a couple of frozen Pina Coladas.
