Taste of Home Surprises

Every so often I get a surprise cookbook or magazine from the Taste of Home people.  Back in the day when I was OCD about recipe contests, I submitted hundreds (literally) of recipes to the Taste of Home site.  While I haven’t visited the site in some time (in fact I can’t even remember my log in information), I still am featured in one of their publications periodically.  When one of my recipes gets picked, I receive a free copy of the publication whether it’s a cookbook or one of their magazines.

Within a two week period recently, I received two holiday cookbooks.   I will be reviewing them both here today.

The first book received was the Christmas book and my featured recipe was the “Pina Colada Bundt Cake”(50).   (This recipe had previously been featured in one of their magazines back in February 2016.)

The cake was listed under the Holiday Feast section.   I have earmarked a few recipes for the upcoming holidays, especially in the slow cooker and make-ahead sections.  The Gift Mix section includes the obligatory cookie jar mixes but also has some interesting recipes for seasonings like herbed salts and rubs.  The Homemade Gifts & Decor section includes creative ideas like an advent calendar made from a muffin tin, knitted infinity scarves, and felted elves.

About a week after receiving the Christmas copy, I found another box on our doorstep containing Holiday & Celebrations. Although there is a “‘Tis the Season” section (including ideas on white elephant parties, Feliz Navidad themes, and Wine & Chocolate parties), other holidays are included:

  • Giving Thanks (A Sentimental Thanksgiving, Black Friday Slow Cooker, Gobble Goodies, Sugar & Spice Desserts)
  • Easter Gatherings (Food and Fellowship, Easter Egg Luncheon, 5-Ingredient Easter Dinner, Spring Staples)
  • Special Celebrations (Seeing Red, Mother’s Day Brunch, Rehearsal Dinner, Low Country Boil, Rooftop Fireworks Party, Cheers for Cheese!, and Scary Movie Night)

Fun recipes, themes, and ideas.

Herb-Vinaigrette Potato Salad

This is a great way to celebrate early produce from the garden. To add some more crunch, sprinkle with croutons.  (This recipe is featured in Taste of Home’s Holiday & Celebrations, 2017).

Ingredients

  • 3 lbs. small red potatoes, quartered
  • 1 lb. fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 cups sliced radishes
  • 6 green onions, sliced
  • 2 T. chopped fresh chives
  • 2 T. chopped fresh parsley
  • 2/4 c. olive oil
  • 1/4 c. champagne vinegar or white vinegar
  • 1 T. Dijon mustard
  • 1/2 t. salt
  • 1/4 t. coarsely ground pepper

Instructions

  1. Place potatoes in a large saucepan, add water to cover. Bring to a boil. Reduce heat; cook uncovered for 10-15 minutes or until tender. Remove potatoes with a slotted spoon; cool.
  2. Return water to a boil. Add asparagus; cook, uncovered for 2-3 minutes or just until crisp-tender. Remove apsaragus and immediately drop into ice water. Drain and pat dry.
  3. Transfer the potatoes and asparagus to a large bowl; add radishes, green onions and herbs.
  4. In a small bowl, whisk the vinaigrette ingredients until blended. Pour over potato mixture; toss gently to coat. Serve at room temperature or chilled. Stir before serving.

Yield: 12

Prep Time: 10 mins.

Cook time: 25 mins.

Total time: 35 mins.

Lord knows I have enough cookbooks to last to infinity and beyond….

But, I think I will be keeping these two…at least through the holidays.  Then, I might regift them or have a giveaway HERE.   (That latter comment is not a bad idea!)
