Jalapeno Jelly Bacon Burgers

We usually have a giant sandwich to mark the food fest that is Super Bowl Sunday.  This year we decided to try something different.

To round out my hastily put together mini-series of Super Bowl bites, I decided to try this combination, recommended to me by a co-worker and friend.  During the holidays, I give out many, many 4 oz. jars of jams and jellies to co-workers, friends, and relatives.  (I think I had 60 of these mini jars at the beginning of December. I gifted them all.)

The different varieties of jalapeno jelly seems to be the most popular.  (I made regular jalapeno, tequila jalapeno, apricot-jalapeno, apple jalapeno and berry jalapeno jellies this year.)

After gifting a jar to said friend, she told me that they have started putting my jalapeno jelly on burgers.

Now, why didn’t I think of that?

Jalapeno Jelly Bacon Burgers

Hot, savory and sweet….and with BACON!

Ingredients

  • 4 oz. bacon (about 4 thick slices)
  • 1 lb. ground beef
  • 1/2 t. garlic powder
  • Fresh ground pepper and sea salt
  • jalapeno jelly
  • toasted hamburger buns

Instructions

  1. Heat grill to high.
  2. Place bacon in a food processor and pulse until ground.
  3. In a separate bowl, mix beef, ground bacon with powdered garlic, salt, and pepper.
  4. Form into four patties and grill. (Because of the bacon, grill until there’s no pink inside.)
  5. Remove from grill and let rest.
  6. Toast buns and spread with jalapeno jelly. May garnish with pickled jalapenos.

 

These burgers will definitely be on our summer grilling schedules.
