Whole Wheat Cardamom Chocolate Chip Cookies

Try this one.


Based on cookies from Heirloom Brewing.  (Which has some mighty fine brews, too.)

My version.

 

 

Whole Wheat Cardamom Chocolate Chip Cookies

Ingredients

  • 1 c. whole wheat flour
  • 3/4 c. rolled oats
  • 1/2 t. cardamom
  • 1/2 t. baking soda
  • 1/2 t. fine sea salt
  • 1/2. c. unsalted butter, softened
  • 1/3 c. sugar
  • 1/3 c. brown sugar
  • 1 large farm fresh egg
  • 1 c. chocolate chips
  • 3/4 c. chopped walnuts

Instructions

  1. Preheat  oven to 350 F degrees.
  2. Place the oats in a  food processor and pulse until ground.  Place in a medium mixing bow, add flour, cardamom,  baking soda and salt.  Whisk to combine.  Set aside.
  3. In a stand mixer, beat beat butter until fluffy.
  4. Add white sugar and brown sugar.   Beat until creamy.  Add egg; beat until smooth.
  5. Add in chocolate chips and nuts and beat until just incorporated.
  6. Using a cookie scoop, drop onto a silicon lined baking sheet.  (May also line with parchment paper.)
  7. Bake until firm around the edges and golden on top (about 12-15 minutes).
  8. Cool cookies for 2 minutes on sheet then remove to wire rack to cool completely.

Of course, the “bakeshop’s” cookies were a bit lovelier and bakery looking.  I love that they are using a brewing by product with the spent spelt.

I did fall in love with the flavors of these little bites, though.

Now the big question of the day…how are these with beer?
