Strawberry-Spinach Smoothies

I started with one recipe from one of my magazines—it might have been EatingWell.

As I stared at my refrigerator, freezer and pantry, upset that I didn’t have the basic smoothie ingredients, I started to improvise. I ended up with a totally new recipe and a very beautiful smoothie.

I started with one recipe but ended up with something completely different.

Ingredients

  • 2 c. white cranberry juice
  • 1 c. low fat plain Greek yogurt
  • 1 c. baby spinach
  • 1 banana
  • 2 T . raw sunflower seeds
  • 1 1/2 c. frozen strawberries

Instructions

  • Place all ingredients in a large blender. Puree.

Yield: 5 cups

Please notice that this makes five cups.  Depending on the size of your smoothie cups, the recipe could serve 2-4.  (We used large cups!)  🙂

I just love the flecks of red and green in this smoothie.

    • I think it would be a beautiful color with regular cranberry juice. That’s just what I had in the fridge. 🙂 You have a great weekend as well!!!!
