Herbed Veggie Dip

I think I’ve written this before…

My Super Bowl posts tend to be done a year in advance.   We try an appetizer or a dip or our own Super Bowl watch party and I post it the following year.  So far, it’s worked out quite well.   (I tend to do the same thing for New Year’s festivities with recipes and pre-posting.)

This lovely herbed veggie dip was the feature at last year’s shindig.

Try this at your next party whether it’s football related or not.

Herbed-Feta Veggie Dip

Perfect to counter-balance the onion dip at your Super Bowl Party

Ingredients

  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1/2 c. fresh parsley
  • 1/4 c. fresh chives
  • 1 t. dried dill weed
  • 1 T. lemon juice
  • 1/2 c. olive oil
  • 3.5 oz. crumbled reduced fat feta
  • 1 c. nonfat Greek yogurt
  • pinch of Aleppo pepper

Instructions

  1. Place garlic, green onions, parsley, chives, dill weed,  and lemon juice in a food processor and process until finely chopped.
  2. With motor running, drizzle in the olive oil until incorporated. Add feta and process until smooth; pulse in yogurt.
  3. Remove to serving bowl and sprinkle top with Aleppo pepper (or smoked paprika).
  4. Serve dip immediately with vegetables or cover and store in refrigerator for up to 3 days.

This is great with pretzels, too.
