Grapefruit-Olive Oil Cake

If you recall, I had a surplus of grapefruits recently (from my in-laws south Texas backyard trees).   Now, don’t get me wrong, I love grapefruit (especially in a Greyhound), but I hated to see any of these red beauties go to waste.

My MiL loves grapefruit, too, and since she was coming for a visit, I decided to make a citrus dessert in her honor.  

Grapefruit Olive Oil Cake

Ingredients

  • 4 eggs
  • 1 c. sugar
  • 1/2 c. extra virgin olive oil
  • 1/2 c. grapefruit juice, freshly squeezed
  • 1 t. pure vanilla extract
  • 1 c. whole wheat flour (fine mill)
  • 1/2 t. baking powder
  • 1/4 t. fine sea salt

Instructions

  1. Preheat oven to 350ºF.
  2. Oil a 9″ spring form pan and line the bottom with parchment paper.
  3. In a bowl of a stand mixer, whisk eggs and sugar together on high speed until fluffy and very pale, almost white (about 5 minutes).
  4. In a 1 cup liquid measuring cup, combine the oil, juice and vanilla.  Turn mixer speed to low and stream in oil, grapefruit juice and vanilla
  5. In a separate small mixing bowl, whisk flour and dry ingredients together.  Add by spoonful to the batter while on low speed.  Only mix long enough for the dry ingredients to be incorporated without lumps.
  6. Pour into prepared spring form pan and bake for 40- 45 minutes. The top will become quite brown, as will the edges.
  7. Allow to cool 30 minutes in the pan, then unhook and remove from pan, cool completely on a rack.
  8. Cake keeps at room temperature, covered, for up to 7 days without suffering loss of texture or quality.

 This cake is not overly sweet so it did lend itself to a drizzle of some raspberry-lemon syrup that I recently made.  No photos of this, though, because by the time I got around to snapping a photo,  I used up all the syrup on other items.  And, there were only two pieces of cake left.

  It was still good with just a slice of citrus next to it.

I have made this cake with Meyer lemons and I would love to make this recipe with other citrus juice like key lime.
