As promised—a watermelon cocktail

Tuesday, it was 100 degrees here.

Wednesday, it was 79 degrees.

Today the high was 59 degrees.

As Will Rogers said, “If you don’t like the weather in Oklahoma, stick around a minute.”   (I am paraphrasing but you get the general idea.)   Seriously, I have seen it be in the 70s in the afternoon with a snow storm advancing in that evening.

Fun stuff, especially if you are trying to raise a garden.

So, you can see why I am so excited about our watermelons.   Just the simple fact that we were able to keep them alive this long, hot, dry summer gives me more than enough reason to be ecstatic about this  gardening success.

As we sat on the patio this evening to celebrate upcoming fall, a watermelon cocktail was the obvious choice for a potent potable.   (I know with our first ice storm this year, we will be looking back and wondering why we were celebrating and not mourning the end of summer.)

We deemed these delicious, but I thought they were a bit too frosty as I pulled my jacket tighter around me.  I am so fickle, griping about the heat one day and complaining about the cool temperatures the next.  I actually began wishing for a hot toddy or something.  🙂

But, the tequila soon warmed me up!

I simply adapted our very successful Blackberry ‘Rita, turning it into “Watermelon ‘Ritas.”  (As I insinuated in the last post, I had foreseen a watermelon cocktail of some kind in our future.)

 Watermelon ‘Ritas

1 c. cubed watermelon, seeds removed
1/2 T. agave nectar
1 (12-oz.) can frozen pink lemonade concentrate
12 oz.  100% agave blanco tequila
Crushed ice (optional)
3 c.  club soda (optional)

Basil or mint for garnish

Place watermelon, agave nectar, lemonade and tequila in a blender.  Pulse until pureed and blended.  (For slushier ‘Ritas, add crushed ice and blend.  For “sparkling” ‘Ritas, add club soda.)

 

Frothy, cold goodness

Here’s to a wonderful mild fall so we can perhaps get some production out of the garden.
