We have a tendency to over plant, crowding as many seeds as we can in a row. When every seed comes up, it is really hard for us to thin out the plants. Anything that grows in our garden deserves to live! I know it is not a good gardening habit. So, when we planted carrots, we planted as thick as possible.
We have been thinning them out and enjoying baby carrots.
I was out picking lettuce tonight for dinner and decided I would pull a few more baby carrots. I guess I had not been to the carrot patch in a while because I pulled up some whoppers.
I roasted baby carrots last night with just a little extra virgin olive oil, sea salt and pepper, and about one tablespoon of fresh chopped rosemary. Very tasty. They went well with our entirely LOCAL dinner of hormone-free grass fed steaks, fresh salad from the garden and the roasted carrots. We topped off our dinner with fresh strawberries.
