Ninth day of Christmas…

It is very easy to get local pecans here, so most of my baking is done with these nuts.  Pecans can easily be substituted for walnuts or any other nut when baking or cooking.

Mom always made this recipe during the holidays.  It comes from another antique cookbook, “Creative Cooking Best with Your Gas Range.”

Another "oldie but a goodie."

I think it was a freebie in the late sixties.  (There’s no date in the book.)

This recipe holds special memories for me.  We were married during the Christmas season.  (A hectic time but, wow, did I save on flowers as the church was already decorated to the hilt!)   As our anniversary draws near, I remember mom and I making tons of these spiced nuts for our reception table.

I have altered it a bit to accommodate a larger amount.

Spiced Nuts

2 egg whites
1/2 c. sugar
1 T. ground cinnamon
2 1/2 c. pecan halves

Preheat oven to 300 degrees.

Whisk egg whites until frothy and set aside.  In another small bowl, mix together sugar and cinnamon.  Pour egg whites over pecans and stir to coat.   Add cinnamon-sugar mixture and continue to stir until all pecans are coated.

 
 
 

 

Ready for the oven.

Place on a baking sheet lined with parchment paper.  Bake for 30 minutes, stirring every 10 minutes.
