Especially on a rainy day.
Coconut Mango and Mint Margaritas
2 c. frozen mango cubes
1 c. coconut water with pulp
2-3 oz. blanco tequila
4 large mint leaves
1 oz. lime juicePlace all ingredients in a blender and pulse away.
Serve.
The frozen mangoes gives this concoction a slight smoothie consistency, albeit an adult smoothie.
I will blame the slight tilt in the pic above on the imperfection of my margarita glasses! 🙂

Oh my – I DO so love a nice smoothie 😉 I’m not usually a fan of frozen margaritas, but I might make an exception for this one!
And I think is a great smoothie base with the mint, coconut, and mango.
