Use this for your next tailgate (or Superbowl Party or Christmas Eve festivities).
I made this for our Christmas Eve buffet last year. Be a Holiday Hero and construct this sandwich this year (or for a New Year’s Eve party next year).
Holiday Hero
Adjust the ingredients to the size of your loaf. Get really crazy and use a loaf you have to measure in meters!
Ingredients
- 1/4 c. red wine vinegar
- 1 t. dried oregano
- 1/2 t. dried mustard
- 1/2 c. olive oil
- sea salt and fresh ground pepper
- 1 loaf Italian bread, cut in half lengthwise
- 1/2 c. sliced pepperoncini peppers
- 1/2 c. cherry peppers (mild or hot), seeded and chopped
- 2 c. finely shredded iceberg lettuce
- 1 large tomato, thinly sliced
- salami (3-5 oz.)
- mortadella (3-5 oz.)
- deli ham (3-5 oz.)
- 5-6 slices provolone
Instructions
- In a small bowl, combine vinegar, oregano, mustard, salt and pepper. Stir to mix well, then slowly whisk in olive oil until incorporated.
- Lay the bottom half of the loaf on a work surface and spread the pepperoncini and cherry peppers over the bread. Scatter evenly with lettuce and layer with tomatoes. Drizzle with a few tablespoons of the red wine vinaigrette. Add more salt and pepper at this point if you like.
- Layer the meats, one at a time, over the tomatoes and top with a layer of provolone cheese. Drizzle the remaining vinaigrette over the cut side of the top of the loaf.
- Close the sandwich and press down gently. Cut into 4-6-inch pieces. Serve.
Yield: 6-8
