I got one final quart from the u-pick farm. Together with two leftover peaches I made this easy and yummy cobbler. I think you could use any berries or fruit combo, but you might want to omit the thyme. (I got the idea for adding thyme from the Chef Love recipe posted on 6/12–“It is Almost Blackberry Time.”)
Peach/Blackberry Cobbler with Thyme
1 quart fresh blackberries, washed
2 fresh peaches, peeled and sliced
3/4 c. sugar
1 t. vanilla
2-3 sprigs of thyme (remove leaves, discard stems and chop)
1/2 c. butter, melted
For topping:
1 1/2 c. flour
1/4 t. salt
1 c. sugar
1 c. brown sugar
1/2 t. cinnamon
4 t. baking powder
1 1/2 c. milk
Preheat oven to 350 degrees.
In a 9 x 14 inch pan, carefully arrange blackberries on bottom. Mix peaches, sugar, vanilla and thyme and layer this mixture over berries. Melt butter and pour over fruit.
Whisk together flour, sugars, cinnamon and baking powder. Stir in milk until incorporated. Pour over fruit mixture.
Bake for 30-40 minutes or until cobbler topping is brown.
Serves 10-12.
