First of all, I hope that everyone had a joyous holiday and everyone still has all their fingers and toes. In other words, I hope your holiday was safe and without any fire work mishaps. 🙂
I missed strawberry season this year.
It came and went.
I know there is nothing local about this, but I did score some $.99 cartons of California strawberries at Aldi’s last week. It was just an offer I couldn’t refuse. I couldn’t resist. Forgive me.
And, you know that Heather at Girlichef has me totally hooked and obsessed with posicles this summer. Thank you, Heather. Our desserts are healthier thus far and this new obsession is perfect for our hot summer.
I even bought some new popsicle molds! (I am so excited and yes, I am easily amused.)
Strawberry Creamsicle Pops
Based on Strawberry Creamsicles from The Ultimate Smoothie Book by Cherie Calbom1 can lite coconut milk
2 c. fresh strawberries, cut in half
4 t. honey
1 t. pure vanilla extract (but the next time I make these, I am going to add almond extract.)
4-5 more medium strawberries, choppedPour coconut milk into a blender or food processor and add the 2 cups of halved strawberrie, honey and vanilla. Blend until smooth.
Place the chopped strawberries in the bottom of popsicle molds. Pour the pureed mixture in molds and freeze.
This makes enough for six large popsicles (with just a bit left over for sampling)!

Abby, I was out in the garden and yard snapping some new flower pictures for you. Izzy, one of our cats, was accompanying me. As we were tooling around, we both saw a pretty sizable box turtle making his way. Izzy made it to him first and wanted to make friends. He was having none of that and even snapped at her. I got this picture right before he made it known he did not want to be friends.
I may have missed strawberry season, but I am knee deep in blackberry season now. Stay tuned for some jam (and other) recipes.

Love the last picture! We have a few turtles and a cat, but they all seem to ignore each other. I think the cat is actually bored with them because they don’t move fast enough. I’m definitely going to need a couple of these creamsicles next week. It’s going to be HOT here! Thanks for sharing!

I just bough popsicle molds as well and my first experiment was with a coconut milk/ fruit combo! great minds think alike 🙂

If you ever get to Utah you must visit a store called Gygi’s–it is a cooks/foodies dream store. I just drool over all the fun gadgets that I am sure I ‘need’.
