Breakfast Cookies

I have long been a lover of eating cookies for breakfast.

I will admit it.

Finally, I don’t have to feel guilty any longer.

Here is a breakfast option, chock full of healthy stuff.

Eliot's Eats

Breakfast Cookies
based on Zucchini Granola Cookies

3/4 c. butter, softened
1 ½  c.  packed brown sugar
1 egg
1 t. orange extract
1 t. vanilla extract
1 c. whole wheat flour
2 ½  c. all-purpose flour
3 c.  granola (without dried fruit)
1 t.  baking soda
|1 t. sea salt
3  c. shredded zucchini
1 c. white chocolate chips

In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, orange extract and vanilla.

In a separate bowl, combine flour, granola, baking soda and salt.  Whisk together.

Add to creamed mixture and mix well.  Stir in zucchini and white chocolate chips.

Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12  minutes or until lightly browned.

Remove to wire racks to cool. Yield: 6-1/2 dozen.
