One of my favorite blogs is Liv Life. Kim posts the best recipes. I adore her Pumpkin Granola recipe and I was also taken with her recipe for Strawberry Oatmeal Jam Bars. She posted this last April and I have been making these beauties all summer.
The only changes I made to her recipe were:
(a) I used blackberry-thyme jam instead of strawberry.
(b) I swapped out half the butter and substituted coconut oil.
These are so good and they are perfect for a breakfast on the run.

Sorry for the short and sweet (pun intended) post. Busy week. I am really focusing more on work and it is paying off. I have been getting to work early and staying late (most days) and trying to get everything done. I have made a conscious decision to start the day (and our students’ day) with a smile on my face. Remarkably, it has paid off. We have had a totally uneventful first two weeks of school.
My desk is even somewhat clean and organized and I hope this is a great start to an awesome school year.
And a big thank you to everyone from SRC Group C (and many others) who stopped by my last post. You see, I was an orphan this month and I was feeling neglected. Your comments always bring a smile to my face!

I love your take on the bars!!! In particular I’m liking the substitution of the coconut oil. I’m fairly new to the oil, but so far everything I’ve used it in I’ve loved.

I adore Kim as well. It totally doesn’t surprise me that the first blog I visit after having my internet down for a week is one where she’s mentioned. The bars look amazing. I need to make them (and go look at that blackberry thyme jam).
