First of all, Happy Halloween!
You know when we travel, I typically milk our experience into numerous posts. Our recent trip to Taos is no different. For the next installment, read on….
On our drive to the Gorge and our morning hike, I spotted a funky looking quonset building set back from the highway. When The Hubs and I travel, I always feel obligated to throw in some special destinations just for him. (Who am I kidding? I love these places, too.)
I had done a bit of research about Taos Mesa Brewing, a new brewery destination in Northern New Mexico. Imagine my surprise when I spotted it along our way.
What a place.
What a vibe.
What a view.
What food.
The brews are pretty darn good, too.
If you look carefully at this photo, you can see their kitchen is actually a food truck. How cool.
There is live music (or some entertainment) every night.
So, more about that Frito Pie. It was made exactly like my mom used to make them: Fritos, homemade chile (with ground beef and beans), grated Cheddar, diced onion, shredded lettuce, diced tomatoes, and sour cream.
More about that Happy Hippie Bowl that I was not able to order. We always want what we can’t have, right? I am thinking about recreating it at home so I can enjoy.
TMB Happy Hippie Bowl: Butternut Squash Veggie Stew with Red Beans served over Rice and topped with Goat Cheese.
Definitely put this on your vacay list if you are in the Taos area!

::sigh:: Much as my hips are mad at me for admitting it, I’d have picked your Hub’s Frito bowl over the salad. That’s my kind of comfort food. 🙂
