We stopped at a roadside stand and bought fresh peaches from Missouri on the way back from KC. We love fresh peaches and when we can buy them straight from the orchard, we tend to over buy. We usually cannot eat them all before they go bad.
We each had one with dinner last night and that left me with four to use up soon. I am trying a butternut carbonara tonight over oven-roasted spaghetti squash. See Foy Update (a great site) for a wonderful recipe.
What a better way to end this farm fresh meal than with a fresh peach dessert.
Peach Sorbet for Two
2 large peaches, blanched, peeled and pitted
1/2 lemon, juiced
1/4 c. sugar
1/8 t. almond extract
Blend all ingredients in a blender and then chill for one hour. Pour into ice cream maker and freeze according to machine’s directions.
I love sorbets. They’re so easy to make and perfectly refreshing. I really like the almond in this one.
