Peach-Amaretto Sauce

The Peach Preserve Cake was good, but it needed a bit of something.   I found no forgotten carton of vanilla ice cream in the freezer (or even Cool-Whip) and since the 2012 Clean Out  is all about eating what we have on hand, I wanted to experiment with a quick sauce for our cake.

I used about a cup of the plethora of peach freezer jam and added some amaretto.

Peach Freezer Jam

I think brandy, cognac, or even bourbon would work nicely, too.

Peach-Amaretto Sauce

1 c. peach freezer jam, thawed
1/3 c. Amaretto

Combine jam and Amaretto in a small sauce pan.   Heat to boiling while stirring constantly and then reduce to simmer.  Let simmer, stirring occasionally, until sauce is reduced a bit.

We had one little boil over issue.

Let cool slightly and serve.

Peachy and more peachy goodness!

Oh, how I wish I could find some ice cream in the freezer!   This would be wonderful over a bowl of vanilla-bean.
