The Peach Preserve Cake was good, but it needed a bit of something. I found no forgotten carton of vanilla ice cream in the freezer (or even Cool-Whip) and since the 2012 Clean Out is all about eating what we have on hand, I wanted to experiment with a quick sauce for our cake.
I used about a cup of the plethora of peach freezer jam and added some amaretto.
I think brandy, cognac, or even bourbon would work nicely, too.
Peach-Amaretto Sauce
1 c. peach freezer jam, thawed
1/3 c. AmarettoCombine jam and Amaretto in a small sauce pan. Heat to boiling while stirring constantly and then reduce to simmer. Let simmer, stirring occasionally, until sauce is reduced a bit.
Let cool slightly and serve.
Oh, how I wish I could find some ice cream in the freezer! This would be wonderful over a bowl of vanilla-bean.

I really think that you made the perfect pick, using amaretto. I think I would like to spend one hour in your pantry-yum!

I seem to always have some Amaretto in the pantry. I love to bake with it.

That reminded my of the Peach and Amaretto ice cream I made. A warm peach and amaretto sauce over it would have been great (cause you can’t have too much peach and amaretto). I bet the sauce would be good on waffles or pancakes also, add a little amaretto to your coffee…great Sunday brunch. Excuse me while I check and see if I have any peach jam…

This is so funny but I actually often put amaretto in my peach preserves! It adds a fun bite to the jam. Your sauce sounds fabulous. We are on the same food wavelength I think.

I use this over a block of cream cheese, served with thin, thin Ginger cookies. So so good for a guick snack or party dish
