I cannot believe it is an end of a decade. In fact, until recently it did not occur to me that we were really at a milestone New Year’s.

Start the year out right with a healthy hummus. This version is full of roasted red pepper and black-eyed peas.
Eat your black-eyed peas for good luck in 2020!
Happy New Year Hummus
How many days of good luck will you have after eating this hummus? An infinite number!
Ingredients
- 1 (15 oz.) can black-eyed peas, drained
- 1/4 c. lemon juice
- 1/4 c. tahini
- 1 glove garlic
- 1 T. olive oil (plus more if needed)
- 1/2 t. ground cumin
- 3-4 slice roasted red pepper (jarred)
- salt and pepper as needed
Instructions
- Place all ingredients in a food processor EXCEPT the red pepper. Process until smooth and creamy, scraping down the bowl as needed.
- If the mixture is too thick, add 2 to 3 tablespoons of water until it’s the desired consistency.
- Add the red pepper and pulse a few times. (I like to leave a few chunks of pepper.) Taste for salt and adjust as needed. Garnish with more red pepper strips. Serve with pita chips, crackers or crostini.
- Store homemade hummus in an airtight container and refrigerate up to one week.
