Okay, I have drawn out this cooking class to five episodes. Today is the last installment.
This coleslaw recipe is from the 3 Guys Smokin website. During the class they mentioned that they had a coleslaw that appealed to those that love creamy slaw and those that love a vinegar-based salad. This is true. It is really the best of both worlds.
I substantially decreased the amount of sugar; in fact, I totally omitted it and added a bit of honey. (I have to confess; I used a pre-packaged, already cut cabbbage-carrot mix for this dish too. Forgive me.)
Creamy-Tangy Coleslaw
based on Poke’s Smokin’ Cole Slaw1/8 c. honey
salt and pepper
1/8 c. 2% milk
1/4 c. mayonnaise (I used the olive-oil type.)
1/8 c. buttermilk
1 T. white vinegar (I used champagne vinegar.)
2 T. lemon juice
about 5 c. shredded cabbage (add carrots if you wish)Place honey, salt and pepper, milk, mayo, buttermilk, vinegar, and lemon juice in a blender and mix well. Pour over shredded cabbage. Toss and let set in refrigerator for at least one hour.

Abigail, here is what that flower turned into. It is called a Surprise Lilly because it sends up lots of leaves (but no flowers) in early spring. All the leaves fade away and then when you have totally forgotten about it, these beautiful flowers pop up and surprise you.
Very creamy, crunchy and appetizing!

This does look like a nice coleslaw! I might eliminate the sweet altogether though, but that’s just me. (Although after tasting it I might well decide that was a mistake, and add it back in!)
I have seen recipes that call for something ridiculous like two cups of sugar. I can’t go there.
