Today’s post is not necessarily a “salad” but the leftovers are good cold. That counts as a salad-like dish, right? (I don’t know why I’m really worried about it, my Salad-a-Day quest, while not falling totally by the wayside, has come up pretty short recently. We definitely haven’t posted a Salad-a-Day.)
Besides, I wanted to get this posted before asparagus season was over.
Asparagus with Chive Seasoned Mayo
1 garlic clove, minced
2 T. fresh lemon juice
1/2 c. mayonnaise
2 T. finely chopped chives (I used garlic chives.)
1/2 t. celery seeds
1/2 t. fresh ground black pepper
sea salt to taste
dash of pepper flakes
1 lb. steamed or grilled asparagusCombine garlic and lemon juice and let set for 10 minutes. Mix in remaining ingredients.
Serve over asparagus.
The original recipe for this mayo comes from Bon Appetit’s Best Fried Chicken Sandwich. I maintain that this stuff is golden and can be used on any summer produce.
Serve on asparagus, on a sandwich, with fries.
Use in tuna salad, deviled eggs….OMG! What about on a BLT?
Finally, I wanted to highlight a great kitchen gadget, these herb scissors.
My mom got these for me as a gift and I love them. I am not one to have extra gadgets cluttering up draws, but these have their own special place. They work great!

Now I want a pair of those scissors more than anything! A Salad a day isa worthy goal but I would screw it up. We have been trying to eat healthier though.

Planning on grilling some asparagus tomorrow night. Looks like I need to try this chive mayo. My chive plant desperately needs some thinning out.
I have thinned, moved, and given some away. Poor little things were jam packed in there.
