I hope everyone had a great July Fourth holiday! We celebrated a week early at the lake with family. In an unprecedented move, we both took over a week off and played at the lake all week.
It was relaxing and exhausting at the same time (if that makes sense). It was great to spend that much time with family in a beautiful setting.
Our menu at the lake was typical vacation food: burgers, hotdogs, steaks, sandwiches and lots of snack food.
Prior to our week of play, we hosted The Hubs’ mom and dad in early June. We whipped up some great food when they were here.
This is a great recipe that starts with a rotisserie chicken. It’s a genius way to prepare a prepared chicken.
Heat ¼ cup extra-virgin olive oil in a small saucepan over medium. Add ½ tsp. dried oregano, ½ tsp. ground coriander, ½ tsp. ground cumin, and ½ tsp. ground turmeric and cook until fragrant, about 30 seconds. Quickly transfer to a medium bowl and whisk in 1 garlic clove, finely grated, and 3 Tbsp. fresh lemon juice. Add 2 cups shredded rotisserie chicken (from about 1 lb.) and toss to coat; season with kosher salt. Set aside.

I also made a delicious Caramel Italian Cream Cake for my FiL’s belated birthday. Alas, there are no pictures but this is a keeper of a cake. (I kept thinking I would grab a photo but the cake went too fast.)
At our last staff meeting, a co-work brought a bushel of summer squash to give away. I don’t have any of this variety so I graciously took some off her hands. I made a really great squash-sausage pie…
I hope to post the recipe soon. (I also made some pickles, similar to a bread and butter taste.)
The Godchildren sent The Hubs some jerky for Father’s Day. Beer Jerky!
We’ve been picking a few tomatoes and one cucumber. I hope to have more on the garden to post for August.

It sounds like a great way to spend time at the lake. I popped over to look at the chicken salad and it does sound like a good one.
The photo of your chicken salad looks delicious — obviously there’s more in it than the recipe mentions. I don’t think I ever saw a chicken salad that I wouldn’t like!
