Watermelon Fruit Salad with Mango, Blackberries and Basil

Wow, this summer’s Food ‘n Flix features have me feeling a tad bit ancient.

First there was The Princess Bride and now it’s Dirty Dancing.  Both celebrate their 30th anniversary this year.

Dirty Dancing is a great film to watch on a lazy summer afternoon but it was a bit bittersweet, seeing the late Patrick Swayze in his glorious youth and the late Jerry Orbach as the father everyone wants to have.

Then, there’s Jennifer Grey, pre-nose job.

Although I would not classify this film as a foodie one, there is a bit of food.   Here’s the food and beverage references I picked up on:

  • Roasted chicken and pot roast (in the Kellerman’s dining room during the family’s first supper at the resort.)
  • There’s the watermelon that Baby lugs into the secret world of the resort workers.
  • There’s all the food that Neil offers Baby from the kitchen’s refrigerators:  brownies and milk, rice pudding, cabbage rolls, sweet gherkins, beef or beets (couldn’t distinguish) and fruit salad.
  • Whiskey
  • Old school Budweiser
  • Retro cocktails
  • Breakfasts of eggs/tomatoes/lox, grapefruit, OJ, danishes, and canteloupe
  • “Hungry Eyes”

Gotta love the 80s!

I wanted to be overly clever and create a  Vietnamese flavored pot roast based on Dr. Houseman’s comment:  “Baby wants to send her pot roast to Southeast Asia.”

But, it’s way to hot to cook so I instead I did a watermelon fruit salad.

Watermelon Fruit Salad with Mango, Blackberries and Basil

This salad is perfect for the upcoming Fourth of July or for your other summer barbecues.

Ingredients

  • 3 c. seedless watermelon, cubed or balled
  • 1 mango, peeled, pitted and cubed
  • 6 oz. fresh blackberries
  • 2 T. fresh lime juice
  • 1 T. honey
  • 1 T. basil, chopped  (I used a Thai variety.)

Instructions

  1. Prepare fruit and place in a large serving bowl.
  2. Combine lime juice and honey. Drizzle over fruit and carefully toss.
  3. Garnish with basil.

Yields:  4-6

Enjoy!

This recipe is simple, fresh and delicious.   The slightly spicy mango works well with the milder watermelon and the berries just add a pop of brightness.   You could use mint in this dish if you prefer, but I am a basil freak and the herb worked well, especially with those mangoes.

Our Goddaughter is into everything 80s.  I need to make sure this film is on her watch list.   The music and the innocence could not be more indicative of that decade.
