Catchy post title? Right?
During the first week of January, The Hubs called me from work. “I need help!!!!!!”
After I got through the initial panic, he told me what was up.
They had had a weigh-in at work to accompany a weight-loss pool. The winner after three months would get the pot, $800.
Although he asked for help, he already had a solution—rice bowls and salads.
We both spent the remainder of the afternoon at both of our work spaces seperately researching bowl recipes.
Here is my first attempt using leftover New Year’s Eve shrimp boil ingredients.
Shrimp and Lime-Cilantro Rice Bowls
A recipe for two.1 c. cooked rice
1 c. broccoli slaw
12 cooked and peeled shrimp
1 avocado, sliced
4 grape or cherry tomatoes
1 T. Cilantro Lime Dressing (See recipe below.)Place 1/2 cup of cooked rice in each bowl. Place 1/2 cup of broccoli on top of rice. Arrange the shrimp, avocado slices, and tomatoes on top. Drizzle with Cilantro Lime Dressing.
This dressing is super good on most anything. You will have enough dressing left over for at least four more rice bowl creations.
Cilantro Lime Dressing
2 oz. fresh lime juice
2 garlic cloves
1 t. honey
1/2 t. sea salt
1 1/2 T. cilantro paste (like Gourmet Garden)
1/4 c. olive oilPlace all ingredients in a blender and mix to incorporate.
These bowls were surprisingly tasty and filling. (You know, for healthy food and all.)

Just to clarify, The Hubs came up with the title of this post. He has some other zingers involving our new eating habits that I will just have to share with you later. 🙂
This post also marks another momentous occasion, albeit belatedly. On January 12, I published my 1,000 post!
Today is 1,001!!!!
I can’t believe I have racked that many up. It seems a long time ago when I actually published my first meager post. It was just a simple little blurb about Santa Fe and some life changes. Sometimes I am amazed I am even still at it. I don’t usually have this kind of stick-to-it-ness.

I wish my husband’s company had such a fun project :-)) That salad looks wonderfully delicious and healthy with just a few real quality ingredients.
I know. One thing about the rice bowls is that a few fresh ingredients can make a whole dinner.
We’ve been trying to slim down and eating a lot more bowls lately. This one looks awesome! I love the hubs’ title, btw. I’d like to hear the other contenders… 😉

Wow, 1001 posts! You go! Congrats — that’s a lot of posting. And cooking. And eating. 🙂 Great, healthy dish. Shrimp is perfect “diet” food — very tasty, not too caloric, and it fills one up. The rice bowls are a good idea. Hope your hubs wins!

Nothing like $800 to motivate a change in diet. 🙂 We getting into rice bowls and noodle bowels as well. They are so versatile and healthy, not to say delicious as well.
