My mom passed this recipe along to me a couple of years ago. I remember my aunt always having chocolate covered peanuts at Christmas, the same aunt of Red Velvet Cake fame. They would be in some sort of glass dish on the kitchen bar and we would sneak pieces while we waited for the huge buffet spread for Christmas Eve dinner.
One warning: Carefully watch your crockpot. I have to make these on the “warm” setting. (My first batch was burnt and this concoction scorched is not a pleasing aroma.)
Chocolate Covered Peanut Clusters
1-16 oz. jar salted peanuts
1-16 oz. unsalted peanuts
1 bar German sweet chocolate (baking size)
1-16 oz. pkg. chocolate chips
1 pkg. each of chocolate and vanilla almond bark
Place ingredients in the crock pot in the order given. Put crock pot on low for three hours. Stir to mix and drop on waxed paper to cool.
