Aleppo-White Zinfandel Jelly

One of my most requested jellies is my pepper jelly.  I have a lot of different versions:

Apricot-Jalapeno Jelly

Hot Pepper-Tequila Jelly

Cherry-Pepper Jelly

Roasted Hatch Green Chile Jelly

Jalapeno-Berry Jelly

Mango-Jalapeno Jelly

The garden was a bust this year.  Seriously, I think I picked maybe a handful of peppers.    So, no pepper jelly this year, my friends.

I still wanted something spicy so when I saw a packet of Aleppo pepper in the pantry, I decided to experiment.  Again, as with most all of my jellies and jams this season, it has a boozy base.

The Aleppo-White Zinfandel Jelly is in the center. I love the color.

Aleppo-White Zinfandel Jelly

Spread goat cheese on crostini and top with this jelly for an easy appetizer.

Ingredients

  • 3 1/2 c. white Zinfandel
  • 1 1/2 t. crushed Aleppo pepper
  • 1/2 c. bottled lemon juice
  • 1 (1.75 oz.) pkg. powdered pectin
  • 4 1/2 c. sugar

Instructions

  1. Sterilize jar and prepare water bath.
  2. In a 6- to 8-quart heavy pot combine wine, lemon juice, and pectin. Whisk until pectin is dissolved.   Add Aleppo pepper.
  3. Bring to a full rolling boil, stirring constantly. Add sugar.  Return to a full rolling boil, stirring constantly and boil hard for 1 minute, stirring constantly. Remove from heat. Quickly skim off any foam with a metal spoon.
  4. Ladle hot jelly into sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.
  5. Process filled jars in a boiling-water canner 5 minutes (start timing when water returns to boiling). Remove jars from canner.  Cool.

Yield: 6 half pint jars

This is a truly beautiful jelly.   And I love it on goat cheese.   It’s great for a charcuterie or cheese board, too.  It is also not bad on a bagel with cream cheese.
