I think I’ve written this before…
My Super Bowl posts tend to be done a year in advance. We try an appetizer or a dip or our own Super Bowl watch party and I post it the following year. So far, it’s worked out quite well. (I tend to do the same thing for New Year’s festivities with recipes and pre-posting.)
This lovely herbed veggie dip was the feature at last year’s shindig.
Try this at your next party whether it’s football related or not.
Herbed-Feta Veggie Dip
Perfect to counter-balance the onion dip at your Super Bowl Party
Ingredients
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1/2 c. fresh parsley
- 1/4 c. fresh chives
- 1 t. dried dill weed
- 1 T. lemon juice
- 1/2 c. olive oil
- 3.5 oz. crumbled reduced fat feta
- 1 c. nonfat Greek yogurt
- pinch of Aleppo pepper
Instructions
- Place garlic, green onions, parsley, chives, dill weed, and lemon juice in a food processor and process until finely chopped.
- With motor running, drizzle in the olive oil until incorporated. Add feta and process until smooth; pulse in yogurt.
- Remove to serving bowl and sprinkle top with Aleppo pepper (or smoked paprika).
- Serve dip immediately with vegetables or cover and store in refrigerator for up to 3 days.
This is great with pretzels, too.
