Cranberry Ginger Whole Wheat Quick Bread

I had grandiose ideas.

Yes, I had done the The Twelve Days of Christmas for 2010 and I had done fourteen Christmas gift posts last year.

This year promised to bring posts on Gifts from the Kitchen 2012.”   I had even written many drafts, some  as far back as January 2012.   I had lots of things on my Christmas board in Pinterest.    Again, I had grandiose goals.

The best laid plans…..

This year’s posts were haphazard at best.

I have no excuse.    Yes, work was busy and hectic and stressful.   Enough said.   The blog was not a priority.   Life got in the way.

As Christmas has come and gone, I still feel in the mood to bake and give.

So, here is a gift from me to you.    Forgive the belatedness.

Fresh grated ginger, fresh cranberries, and lemon zest.

Fresh grated ginger, fresh cranberries, and lemon zest.

Cranberry Ginger Whole Wheat Quick Bread

3 c. fresh cranberries
1 1/3 c. sugar
2/3 c. canola oil
1/2 c. 2% milk
2 t. lemon zest (about one large lemon)
1 t. grated fresh ginger
4 large farm fresh eggs
1/2 c. chopped pecans
1 1/2 c. all-purpose flour
1 1/2 c. fine whole wheat flour
2 t. baking soda
1/2 t. baking powder
1 t. fine sea salt

Preheat oven to 350 degrees and spray two loaf pans (8″x4″) with cooking spray.

In a large bowl, stir cranberries, sugar, oil, milk, zest, ginger, vanilla, eggs and pecans with a large spoon until well mixed.2012-12-24 11.16.14

In a separate medium sized bowl, whisk together flours, baking soda, baking powder and salt.

Add dry ingredients to wet and stir until just incorporated.   Divide evenly into the two loaf pans.

Bake one hour or until a toothpick comes out clean.   Cool 10 minutes in pans.2012-12-24 12.20.51

Using a kitchen knife, loosen all sides and gently remove bread from pan.    Place loaves on cooling racks and cool completely.

Wrap tightly.   Freeze one and then slice and serve the rest.

Since I have a blessed two weeks off, I am (rest assured) beginning to plan my Christmas posts for next year.    🙂

Happy New Year!

  • Aw, what a lovely gift! I’ve been even worse than you I’m afraid (that makes it sound like I thought you were terribly neglectful, which I actually don’t!) so I think I’m going to give a belated cookie gift of my own this week-lol. I love fresh cranberries in a sweet bread, I love how the sour pops against the sweet and I’m drooling just thinking about it. Love that you used whole wheat flour. Was this a hit with your family?

  • This looks lovely! I think that cranberries in a bread is always wonderful!

    • It makes me nostalgic (as most things do this time of year). I remember mom making tons of this bread for gifts and for holiday breakfasts.

  • What a wonderful gift! I love it.
Wishing you a relaxing and sweet new year!

    • Thank you, Angie, and back at ya’! I have spent the last two days relaxing and it has been wonderful. I even slept until 9:00 this morning!!! 🙂

  • Oh YUM! Love the addition of the ginger to this quick bread! I’ll take a belated gift like this anytime! 🙂 Hope you had a wonderful holiday and are enjoying the your new year thus far! Looking forward to seeing what you give us in 2013!

  • The bread looks and sounds terrific!! I had to laugh at the last bit about planning your next year’s post. I have not blogged in a while!! Some due to internet problems and some due to being busy and the holidays. I totally understand. Happy New Year my friend!! xoxo

    • Happy New Year to you too, Suzie. Actually, my holidays have been great. It was just the time leading up to it! 🙂 (Definitely needed a break!!!) 🙂

  • Your bread sounds wonderful, cranberries and ginger, what a duo. I think you’ve done great with your blog…you’ve posted way more than I have this year and I was taking pictures of food.

  • I love the kick ginger gives wherever is in! The bread looks delicious! Happy 2013!

  • A coworker makes a similar recipe. I think she uses regular white flour. I may have to make this with whole wheat. It is just enough sweet and tart to make it fantastic.
